排骨 1斤, 干香菇 7朵, 八角 2顆, 香葉 2片, 大蔥 5小段, 姜 4小片, 花雕酒 1湯匙, 醬油 3湯匙, 冰糖 2湯匙, 鹽 1/2茶匙

1干香菇放入溫水泡軟後去蒂

2鍋中倒入清水,煮沸後放入排骨,焯燙至排骨完全變色撈出

3改小火,鍋里倒入油,並放入冰糖,然後用鍋鏟一角不停攪拌;待糖融入油中成黃色,油的表面泛起小泡泡,就炒好了,此時放入排骨,將排骨均勻地裹上剛剛炒好的糖色

4放入八角,香葉,大蔥和姜,再翻炒片刻,調入黃酒醬油,鍋內注入熱水,放入泡好的香菇,小火燉至少45分鐘打開蓋子,調入鹽攪勻,改成大火收湯,待湯汁變粘稠即可出鍋
