小技巧
濾西紅柿汁時盡最大限度的濾出,使西紅柿塊汁能少些。凍餡時如果是速凍的話半個小時攪動一次餡,防止餡凍成坨不好包。餡取出後在室溫下會慢慢化開,最好是把餃子皮都擀好,餡取出後快速包完。
