原料
麵粉: 500克, 豬油: 1匙, 酵母粉: 1小匙, 白糖: 50克, 泡打粉: 適量, 豬裡脊肉: 200克, 蚝油: 適量, 鹽: 適量, 雞精: 適量, 黑胡椒粒: 適量, 孜然: 適量, 圓蔥: 1個
步驟
1面里放白糖,泡打粉,用溫水和酵母粉,倒入豬油和好麵糰,醒發1小時左右,因為放了泡打粉發的快些,面不要太軟,和好用保鮮膜蓋上!

2發到2倍大即可製作!

3擀成大張長方形麵皮,用小碗扣出餅胚!

4每片都刷上油,對摺,用刀背在餅胚上壓出荷葉紋路!要深些不然蒸出來不明顯!然後順著紋路在荷葉邊推,讓其有荷葉形狀!

5後面用手捏出荷葉莖!

6都做完,放蒸鍋醒40分鐘二次發酵,然後大火蒸9分鐘關火,5分鐘取出即可!火一定要大,大火足氣才蒸的好!

7發完面就可以做豬排了,豬裡脊肉切一公分厚的片,然後用刀背砸十字刀,讓肉有紋理好入味!

8放蔥姜蒜,蚝油,雞精,老抽,生抽,鹽,料酒,胡椒粉,花椒粉,少許水抓腌肉片,直到水吸收,這樣做肉比較嫩!腌制30鍾!

9鍋放油加熱,放入豬排,煎至兩面金黃時,放孜然粒,黑胡椒粒!
