1去頭去內臟的泥鰍洗凈瀝干,碼料酒腌制一會兒去泥腥味備用;

2蒜子切丁、姜切片、香蔥切短節、豆瓣醬斬茸;

3豆腐切小塊用淡鹽水浸泡備用;
