原料
豬皮: 1斤, 胡蘿蔔: 適量, 蔥: 適量, 玉米: 適量, 牛奶: 適量, 生抽: 適量, 鹽: 適量, 雞精: 適量, 糖: 適量
步驟
1豬皮洗凈,入鍋過水焯熟後拔毛,刮乾淨豬皮背面的肥肉(要刮乾淨喔,否則煮出來的豬皮很油很膩)

2處理乾淨的豬皮切絲備用

3切好的豬皮放入壓力鍋,加入適量水,鹽,糖,雞精或味精(也可不放)一小把蔥,2-4塊薑片,2瓣蒜頭,大火壓5-8分鐘.

4胡蘿蔔切小塊備用

5蔥切段備用

6玉米粒洗凈備用

7牛奶一小碗(沒有牛奶我用的是淡奶代替)

8凈豬皮分為四份,分別加入胡蘿蔔(紅色),蔥段(也可用其他綠色蔬菜代替),玉米粒和牛奶(白色).生抽(棕黃色)放入果汁機打碎後盛出

9撈出浮在表面的泡沫備用(泡沫要撈乾凈喔)

10準備一個保鮮盒,依次倒入打碎的豬皮汁,倒入胡胡蘿蔔豬皮汁後放入冰箱冷凍十幾分鐘至豬皮凝結後取出,再繼續倒入另外一種豬皮汁,重複冷凍步驟直至豬皮汁全部倒入保鮮盒

11冷凍至豬皮汁凝固後,將保鮮盒倒扣在乾淨的砧板上敲打保鮮盒,使豬皮凍脫出,如無法脫出,用刀子在四邊輕輕切一圈再倒出即可

12用刀將豬皮凍切成小片

14用鹽,糖,陳醋,米醋,生抽,蒜蓉辣椒醬,蒜米,小米椒,調成蘸醬

15將蘸漿淋到豬皮凍上,就可以開吃啦^_^
