小技巧
雪里蕻一定要提前泡水,哪怕是泡的不咸了,等炒制时再加盐调味! 面酱不宜多放,小火煸制,醋一点点就好了! 附:应季的雪里蕻腌制:雪里蕻十斤左右,晾晒一天,熬制盐水放凉后把雪里蕻放入盐水卤制三天左右捞出,用手搓揉每根雪里蕻后码入缸中,码一层雪里蕻放一层盐再码一层雪里蕻……至全部装坛,吃一冬天也不会变黄变色
