步驟
1魚處理乾淨,將兩面魚身各片開四五刀,瀝干備用

2用1勺料酒,2勺生抽,1小勺鹽腌制10分鐘左右

3蔥頭切小段,蔥尾切細絲,姜切絲,蒜剁成蒜蓉,剁椒切成薄片

4調汁:在小碗中倒入1勺料酒,2勺生抽,4勺醋,3勺白糖,5勺清水攪拌均勻,另外再拿個碗用適量干澱粉和清水攪拌均勻

5鍋中放油,油溫大火燒至180度,魚裹上干澱粉,放入鍋中後轉小火炸至兩面金黃盛出

6鍋中留少許底油,燒至五成熱,改小火放入蔥姜蒜爆香

8烹入澱粉水勾芡,如果太濃稠再加點清水,直至調整到自己滿意的狀態
