原料
中筋麵粉: 200g, 水: 100ml, 酵母: 2g(夏)3g(冬), 白糖: 10g, 豬油: 一小塊, 剁椒(蔥花): 適量
步驟
1 碗中倒入50g溫水,加入糖,攪拌融化,再加入酵母,靜置5分鐘(這個步驟也是檢驗一下酵母的活性);

2 取50g水慢慢倒入稱好的麵粉中,再倒入酵化好的酵母水,用筷子攪拌成面絮;

3 加入小塊豬油,揉成光滑的麵糰;

4 蒸鍋中倒入熱水,放上蒸架,將揉好的麵糰蓋上保鮮膜放在上面(盆不要接觸到水),蓋上蓋發酵,這樣溫度,濕度都有了,(用微波爐,烤箱也是可以的);

5 等待發酵的過程,可以先將剁椒炒一下,(鍋燒熱,倒入少許油,放入適量剁椒,小火煸炒幾分鐘就可以了);

6 麵糰發酵至兩倍大,(手指沾少許麵粉,在麵糰上按一個洞,麵糰不回縮,不彈起就表示發好了);

7 發好的麵糰,內部呈蜂窩狀;

8 將發好的麵糰取出,用任何你喜歡的方式將裡面的氣孔排出去,再次揉成光滑的麵糰;

9 用擀麵杖從麵糰中間按壓往兩邊擀,擀成長方形的面片,不宜太薄;

10 用勺子將剁椒均勻的塗抹在面片上;

11 從上往下慢慢卷,稍微卷緊一點;

12 切成差不多大小的劑子;

13 兩小塊摞在一起,用筷子輕輕按壓一下;

14 兩手捏著兩端,輕輕拉長一點,再往相反的方向擰兩圈,(像擰毛巾的方式一樣);

15 鍋中倒入足量的水,屜布淋濕再稍許擰乾鋪在蒸格上,將花捲依次擺好;開火將蒸鍋加熱30秒左右(這裡指的是室溫較低時)微微的熱幫助第二次醒發,20分鐘左右;

16 醒好後就可以開火蒸了,水開後記時,10分鐘,蒸好後燜幾分鐘再取出。
