花甲: 1斤, 洋葱: 2个, 姜末: 少许, 蒜末: 少许, 小葱: 切段, 干辣椒: 适量, 黄酒: 一勺, 味极鲜: 半勺, 耗油: 少许, 酱油: 适量, 冰糖: 2颗, 郫县豆瓣酱: 半勺, 盐: 半勺, 淀粉水: 半碗, 白芝麻: 少许
步骤
1花甲头天晚上放盐水里泡,让它吐出细沙脏东西。

2第二天捞出洗干净,反复多洗几遍,放进锅内煮至嘴巴张开,捞出用凉水冲洗一遍,沥水备用。(过程中可放少许姜片,黄酒去腥。)

3姜末,蒜末,干辣椒,葱段,洋葱,切好备用。

14锅中放入一碗凉水。
