1.牛肉提前腌制入味,加入淀粉,清水,油和白糖可以使牛肉滑嫩 2.大火快速煸熟牛肉,时间过长牛肉会老 3.我加了点黑胡椒,味道更好 4.杏鲍菇尽量切的薄一些,省略提前焯水,直接大火爆炒,口感更好
