小技巧
買回來的花蜆最好用自調的鹽水吐乾淨泥沙和水分,因為是連著殼一起炒,要多洗幾遍才好.洗好後瀝干外表的水分,不要帶有太多的水下鍋, 花蜆本身含鹽量就很高,不用放鹽 炒的過程不用加水,花蜆自身帶水, 要用大火翻炒,不用蓋上鍋蓋, 殼全部張開嘴出鍋即可,不用收干湯汁,太干覺得口感不好.
