原料
: , 杭州茄子: 2根, 五花肉末: 少量, 洋葱或生菜: 半只, 葱末: 适量, 蒜末: 适量, 酱油: 一勺, 蚝油: 一勺, 盐: 少量, 干红辣椒: 2只
步骤
1茄子切成段,放入盆里撒点盐,用手轻揉挤出茄子里的水分备用

2油烧热(筷子放进去周围有气泡即可),茄子放进去炸至表皮起皱

3盛出控油备用

4锅底留少量油(一定要少量,因为茄子里已经吸了很多油),放入葱蒜末,辣椒段翻炒出香味

5再加入肉末,蚝油,老抽,食盐

小技巧
茄子最好去处水分,不然特别吸油!盐也不要放多,因为之前茄子里放了很多盐!
