1梅干菜洗净沥干水分

2鸭子洗净,选择整块

3鸭子焯一水后冲去血水

4放入卤水锅里煮到断生后在卤水中泡3小时左右

5捞起后沥干卤水

6腊肉切成0.6cm左右见方的小块,大蒜和泡辣椒剁碎

7炒锅放油40ml左右,烧到5-6成热,卤好的鸭子皮向下

8关到中小火,烙到鸭子皮出油成金黄色捞起

9把烙好的鸭子捞起后把火稍开大,放入花椒爆一下锅

10再放入蒜米和泡辣椒碎,稍翻炒两下

11放入腊肉颗粒和豆豉一大勺

12翻炒到腊肉出油,豆豉出香味

13倒入梅干菜翻炒几下关火,菜留在锅里不用铲起来

14把烙好的鸭子斩成2-3cm宽左右的条

15碗底抹一层老抽(大概1/4勺左右)

16把鸭皮向着碗底摆一层

17把锅里的梅干菜腊肉碎舀进碗里盖住鸭子,把梅干菜稍压紧,放一点白糖,撒一点盐、味精在梅干菜面上

18碗上盖个盘子,放入高压锅上汽后中小火蒸20-25分钟,蒸好后倒扣在盘子里

小技巧
(1)我的卤水和梅干菜都不太咸,所以我撒了一丁点盐,如果卤水和梅干菜都比较咸就不要放盐了 (2)喜欢辣泡辣椒还可以多放几个 (3)蒸的时间可以根据自己的喜好,喜欢妑一点的可以多蒸一会,不然就少蒸一会,不用高压锅蒸也可以。
