原料
鯧魚 1條, 大蒜 1瓣, 姜 1小塊, 小蔥 1棵, 辣椒 1個, 生抽 15ml, 老抽 5ml, 料酒 15ml, 澱粉 10g, 白糖 5g
步驟
1鯧魚去內臟後用水沖洗乾淨,在魚的身上兩側斜劃兩三刀

2加入鹽,料酒5ml、薑片腌製片刻

3大蒜切片、辣椒切圈、小蔥切碎

4將鯧魚兩面拍上少許干澱粉備用

5炒鍋燒熱,用姜塊擦拭鍋底,放入少許油燒熱,將鯧魚放入鍋中,用小火煎至兩面金黃色後,盛出瀝油

6鍋留少許底油,爆香蔥、姜、蒜片,下鯧魚、加入生抽、老抽、料酒、白糖

7再加入適量清水(水與鯧魚持平),大火燒開後轉小火煮至湯汁濃稠,將鯧魚盛出盤中

8剩餘的湯汁用水澱粉勾芡淋在鯧魚身上,最後撒上香蔥即可
