小技巧
1、豆沙餡料里糖的添加量隨個人喜好,自由掌握; 2、煮好的豆子可以用料理機打碎,追求細緻口感的可以把豆沙過篩,我喜歡這種粗拉拉的口感,所以都是手工一遍操作的; 3、若是做好的豆沙軟硬正好,可以不炒直接團成團,我做的太濕了,所以炒了下。炒豆沙的時候,可以根據個人喜好,添加油、糖等原料; 4、包豆沙的麵皮不要擀得太薄,否則麵皮不易蓬鬆。
