小技巧
1、清洗魚籽時帶著外面的筋膜洗,水管放小水流反覆沖,免得把魚籽衝散了,洗乾淨後再去除筋膜,炒時魚籽就能炒散了; 1、涼鍋涼油放蔥、姜、蒜,要多放點,可以去除土腥味; 3、炒魚籽時要一直翻動,免得嘎巴鍋。
