2浸泡糯米一個半小時!

4發好的麥芽用料理機攪碎.

5待煮好的糯米溫度降至60度,與攪碎的麥芽混合,混合均勻.

6電飯煲下墊個盤子,為了發酵時鍋內溫度不要超過60度.

7發酵5.5小時就足夠了,如果發酵時間過長會有酸味.

8用紗布將發酵出來的液體濾出.

小技巧
1.發麥芽最好在網上買個育苗盤. 2.發麥芽的溫度不要超過25度,要知道小麥都是在冬天生長.其實我夏天也發過,沒用,都發霉了!廚友們不要像我一樣哦!
